Ingredients Needed For Keto Stuffed Chicken

  • Chicken breast
  • Green Chilis: canned green chilis, be sure to get the mild version!
  • Cheddar Cheese: Colby-Jack, or Pepper-Jack also works well
  • Cream Cheese
  • Green Onions
  • Cajun Seasoning: many varieties of cajun seasoning are available in the spice aisle. Simply use your favorite cajun, or all purpose seasoning in this recipe.

How do you make Green Chili Stuffed Chicken?

  1. Preheat the oven to 400 degrees F
  2. Drain the canned green chilis and place them in between paper towels and lightly press down. You need the chilis to be as dry as possible so you do not have too much moisture in your filling mixture.
  3. In a small bowl combine the canned green chilis, cheddar cheese, green onions and softened cream cheese, set aside.
  4. Slice each chicken breast lengthwise so that the breast folds open (be sure not to slice all the way through)
  5. Spread the cheddar mixture on one side of the chicken and fold the other side over, secure with a toothpick.
  6. Lightly sprinkle the cajun seasoning on each side of the chicken.
  7. Place in a greased baking dish. Bake 25-30 minutes until the chicken is cooked through.

How do you butterfly chicken breast?

Place a chicken breast on a cutting board and using a very sharp knife cut through the chicken breast horizontally about 3/4 of the way though. Fold open the top half of the chicken so that it opens like a butterfly.

Each side of the chicken breast should be equally thin so it cooks evenly. This is an excellent method to stuff chicken with any of your favorite fillings.

      Notes

      Cajun seasoning: This can easily be found in the spice section of your grocery store. You can sub your favorite all purpose seasoning or taco seasoning if you prefer.
