Keto Chicken Fajita Quesadilla

This Keto Chicken Fajita Quesadilla is packed with grilled chicken, peppers and onions in a crunchy cheese tortilla! This quesadilla contains just 4 net carbs, making it the perfect low carb meal!

It’s no secret that I love the convenience of wraps and quesadillas, after all, I’ve dedicated an entire website to them! It can be difficult to channel these cravings for carb-laden wraps and quesadillas when following a low-carb diet. The recipe I’m sharing today is perfect for carb-counters, it’s easy, delicious, and keto-friendly!

You can replace the chicken with another protein, such as steak or shrimp, or with portobello mushrooms for a vegetarian option. Don’t forget to eat avocado and salsa to complete this easy meal!

Ingredients for Keto Chicken Quesadilla

  • Cheese Wrap:
  • Grilled chicken
  • Grilled or Sauteed Onions
  • Roasted or Roasted Pepper

Optional ingredients are avocado, sour cream, guacamole, lettuce, tomato, scallions or hot sauce!

Where can I find cheesy wraps for this keto chicken quesadilla?

There are several different brands that offer these cheese wraps in a variety of different flavors. I’ve used it and I love the flavor it provides.

You can easily find them in large grocery stores, usually in cheese boxes near the deli.

How to make Keto Quesadilla?

You only need to follow three simple steps to create the perfect Keto Quesadilla! You’ll need grilled or sautéed chicken, onions, and bell peppers to get started. This could be leftover chicken, rotisserie chicken, or anything like this Jalapeño Lime Grilled Chicken.

Prepare the chicken, peppers and onions according to your taste and set aside. Next, preheat the oven to 350 degrees F. Place the cheese tortilla on a silicone-coated baking mat and bake for about 10 minutes, or until the edges are browned and look like my photo.

Let the cheese crust cool for a few minutes so you can handle it easily. Add the fillings, fold the cheese tortilla over the chicken and vegetables. Add extras like avocado, sour cream or hot sauce and enjoy!

  • 1 Cheese Wrap (mozzarella, Colby-Jack, or cheddar)
  • 1/2 cup cooked chicken
  • 1/4 cup sautéed or grilled bell pepper
  • 1/8 cup sautéed or grilled red onion

Instructions

To begin you will need grilled or sautéed chicken, onion and bell peppers. This can be leftover chicken, rotisserie chicken, or something like this Jalapeño Lime Grilled Chicken. Prepare the chicken, peppers and onions to your liking and set aside.

Next, heat an oven to 350 degrees F. Place a cheese tortilla on a silicone lined baking mat and bake approximately 10 minutes or until the edges have browned and it looks similar to my photo. Allow the cheese shell to cool a few minutes so you can handle it easily.

Add the fillings, fold the cheese tortilla over the chicken and vegetables. Add any extras like avocado, sour cream or hot sauce and enjoy!
