Keto Berry Muffins

Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 cup powdered erythritol
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen mixed berries (blueberries, raspberries, and/or strawberries)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the almond flour, coconut flour, powdered erythritol, baking powder, and salt.
  3. Add the melted butter, eggs, almond milk, and vanilla extract to the dry ingredients. Mix until well combined and a batter forms.
  4. Gently fold in the mixed berries.
  5. Spoon the batter into the lined muffin tin, filling each muffin cup about 3/4 full.
  6. Bake for 20-25 minutes until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
