- 1 tablespoon unsalted butter
- 1 large white onion diced
- 1 carrot sliced
- 2 teaspoons garlic minced
- 2 to 3 thyme sprigs
- 45 ounces canned navy beans or cannellini beans or Great Northern beans, rinsed and drained (3 15 ounce cans)
- 4 cups low sodium chicken or vegetable stock
- 1 pound ham cubed
- 1 teaspoon smoked paprika
- 1 bay leaf optional
In a medium sized sauté pan, heat the butter and cook the diced onion for about 5 minutes on medium low heat.1 tablespoon unsalted butter,1 large white onion
