Instructions:
In a large soup pot, brown the ground beef over medium heat until fully cooked. Drain off any excess fat.
Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent, about 5 minutes.
Add the diced tomatoes, tomato sauce, beef broth, water, chopped cabbage, uncooked white rice, and paprika to the pot. Stir to combine.
Bring the soup to a boil, then reduce the heat to low and simmer for 30-40 minutes, or until the rice and cabbage are tender.
Season the soup with salt and pepper to taste.
Ladle the soup into bowls and garnish each serving with a dollop of sour cream and a sprinkle of fresh parsley, if desired.

Note: You can substitute the ground beef with ground turkey or pork, or make this soup vegetarian by using vegetable broth and omitting the meat. You can also add other vegetables, such as carrots or celery, to this recipe.
