Chicken Cabbage and Bacon Soup
Onion (around 2 cups)
Carrot (around 2 cups)
Celery (around 2 cups)
Garlic (4-5 cloves)
12 cups chicken stock
3 cups chopped chicken (cooked)
1/4 cup bacon crumbles
3/4 head of cabbage chopped into 1″ pieces (8 cups)
2 bay leaves
Palm full of dried parsley
Salt and pepper to taste
I started with some oil in the pot and cooked the onion, Celery, carrots and garlic and cook until they just start to get soft but still crunchy.
Add broth and bay leaves and bring to a boil and let simmer until carrots and celery are mostly cooked.
Add chicken, bacon, cabbage and parsley. Cook on a low simmer until cabbage is cooked and soft.
