Cheesy Garlic Parmesan Spaghetti Squash

Ingredients:

  • 1 medium-sized spaghetti squash
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C). Cut the spaghetti squash in half lengthwise and remove the seeds with a spoon.
  2. Brush the inside of the squash halves with olive oil and sprinkle with salt and pepper. Place the squash halves, cut side down, on a baking sheet and bake for 35-40 minutes, or until the flesh is fork-tender.
  3. Remove the squash from the oven and let it cool for a few minutes. Use a fork to scrape the flesh of the squash into spaghetti-like strands and transfer to a mixing bowl.
  4. In a skillet over medium heat, add the remaining olive oil and garlic, cook for 1-2 minutes or until fragrant.
  5. Add the spaghetti squash to the skillet and toss with the garlic oil. Add the Parmesan cheese and stir to combine. Cook for 2-3 minutes, or until the cheese is melted and the squash is heated through.
  6. Remove the skillet from the heat and sprinkle the shredded mozzarella cheese on top of the squash. Place the skillet under the broiler and cook for 1-2 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped fresh parsley and serve hot.

This dish makes a great side dish or a main meal when paired with a protein of your choice. Enjoy!
