BEET SOUP RECIPE

BEET SOUP RECIPE-BEET SOUP –

I have no written recipe so just make, taste and adjust. Simple peasant food from my Polish family.
Melt about 4-6 TBS butter in a heavy soup pan (I use my LeCruset). Add about 1 medium onion (I use sweet Vidalia) and sauté till tender. These measurements are a gestimate based on my experience but feel free to use a little more butter and onion. Add in one clove of garlic and cook another minute. Stir in about ¼ cup of flour and cook for about 2-3 minutes. Slowly add 3 cans of julian style beets with the liquid. You can use sliced beet and cut them up yourself (see note on fresh beets*). Add in about 1/3 – ½ container of chicken or vegetable broth. Stir and bring to a low simmer for about 3-5 minutes till it is slightly thickened. Now is the “taste and add” part. Add about 2-3 TBS of vinegar,


I use rice vinegar so I probably use a little more and I do like it with a little “tang” so adjust to your taste. Season with a little salt and pepper. Now is the part that makes this soup soooo good. Boil some potatoes, always prefer Yukon Gold. While they are cooking chop some sweet (or yellow) onion and sauté in butter. Mash the potatoes and add in the sautéed onion, salt and pepper and butter to taste. You can add a little milk but keep the potatoes stiff so they hold up in the soup. Ladle soup into bowl, top with a nice scoop of potatoes and enjoy!
*You can use fresh beets roast or boil but you will need to add liquid combination of water and chicken or vegetable broth to replace the liquid in canned beets. I usually use canned beets.
